ANZAC Biscuits

The biscuits came about in 1915 when families set about sending them to soldier relatives fighting at Gallipoli.

Here is a recipe from Edna Everage aka Barry Humphries

125g butter
1 tsp carbonate of soda
1 cup plain flour
1 cup coconut
1 cup sugar
1 tbsp golden syrup
2 tbsp boiling water
tsp salt
1 cup rolled oats
Few drops vanilla

Melt the butter and add 1tbs Australian golden syrup (from CSR, of course), add 2 tbs boiling water in which has been dissolved a tsp of carbonate of soda. Sift one cup of flour with tsp salt, add one cup each of coconut, sugar and rolled oats. Mix into a stiff dough with the butter mixture and add a few drops of vanilla. Make into small lumps on a greased tray. Prick and cook in a slow to moderate oven until biscuits are a pale brown. Leave on tray for a minute after taking from oven then place on a cool plate or tray.

Delicious all year round, including Anzac Day.
